Isn't it possible to import a midi file into Encore ?
There seem to be enough midi files of the carol at choralwiki or at

www.sibeliusmusic.com has several versions of Spring mainly for string quartet. But you might not want it in E major. You don't say how many soprano recorder parts you want !
