Aaron Copland's compositions are all under copyright and cannot be distributed freely.

Sheet music of Copland's "Simple Gifts" arrangement is readily available in print (a simple Google search will show publishers selling it).
It seems that melody and lyrics of the song (but not Copland's arrangement, of course) are in the public domain:

This means that you are allowed to make your own SATB arrangement. You are welcome to post your own arrangement on CPDL under a free license (e.g. CC-BY-SA).
